Ariake Sea Cuisine The Ariake Sea, which is a giant tidal flat spanning 6 km with a tidal range of approximately 6 m, is a treasure trove of rare creatures offering flavors seldom experienced elsewhere, even in other parts of Japan. Some of these delights may be unique in appearance and shape, but are so delicious that you may become addicted once you try them. The secret is the tidal range. The ebb and flow of the tide carries large amounts of nutrients brought down to sea by the rivers. Thanks to this, fish and shellfish are raised in abundance in the rich soil of the Ariake Sea floor. The signatory Bluespotted Mud Hopper is a fish from the Gobiidae family and is recommended to be eaten either grilled or as sashimi. Black Cow-tongue is a type of tonguefish which is normally eaten broiled in soy sauce or fried in butter. Then there is Green Eel Goby, which is grotesque in appearance but surprisingly delicious and a great ingredient for miso soup. Umetake (a species of piddock) is great with sumiso paste. Shellfish such as Hojiya, Mekaja and Agemaki are also delicious. Saga's seafood is indeed unique, but offers the ultimate of taste sensations.
